Made today by adding special bacteria to nonfat or lowfat mik, giving it a slightly thickened texture and tangy flavor. Buttermilk's acidic properties make it an excellent marinade ingredient for chicken and turkey before frying or baking. Buttermilk also gives a moistness, tenderness and a lovely, light tanginess to muffins, cookies and cakes.
